Lunch Box Meals Ideas
Generally for lunch boxes as a family we usually go for the traditional sandwiches, which are cheap quick and easy, but if I’m honest we usually use white bread which is not the healthiest and they can get a bit boring after a while. So I decided to take part in the #FloraLunchbox Challenge.
Flora sent me some recipes for healthy packed lunch creations ideas. So I picked my favourite recipe out from the ones they sent me which was called Moroccan Couscous Salad. Our family love Couscous so I was keen to try out a Couscous Salad recipe as I am always looking for ideas for healthy lunches for our family.
#FloraLuncboxChallenge sent me some info with the recipes and I was shocked to discover that only 1.6% of children in the UK are receiving a lunchbox that meets the nutritional standard set for school meals!
So I made a shopping list from the ingredients list they sent me and went shopping at Tesco.
I managed to get all the ingredients I needed from Tesco and was easy to find everything I needed.
The Ingredients list Flora sent me are below;
1/2 Knorr Reduced Salt Vegetable Stock Cube, dissolved in 150ml boiling water
115 g couscous
20 g Flora Buttery, melted
200 g tinned chickpeas, drained
1/2 pepper, diced
2 spring onions, chopped
4 cm piece cucumber, diced
3 – 4 cherry tomatoes, quartered
1 – 2 tbsp chopped fresh parsley or mint
2 tbsp Hellmann’s Light Mayonnaise
1/4 lemon zest, finely grated (optional)
In a bowl, pour the hot stock over the couscous, cover and leave for 10 minutes – or until the liquid has been absorbed.
Use a fork to fluff up the couscous, then add the melted Flora and mix well.
Add the remaining ingredients and toss well together.
The only part of the recipe that I changed was I didn’t include the chickpeas as our family doesn’t really like them.
It was so quick and easy to prepare which as a busy mum of 2 kids is always a bonus to be able to prepare something healthy but quickly, it was also cheap to buy the ingredients too. Most importantly it tasted really yummy so I would recommend this recipe.
